Broccoli frittata with bread

Ingredients

Preparation

  • 1/3 cup blanch broccoli
  • 2 eggs
  • 2 tablespoons low-fat sour cream
  • 1 tablespoon kefir granules
  • 1 slice Bimbo Double Fiber Bread (cut into large cubes and toasted until crisp)
  • 1 teaspoon parsley (chopped)
  • 1 pinch salt
  • 1 pinch ground white pepper
  • 1 red serrano pepper (sliced)
  • Vegetable oil spray
  1. Prepare two individual soufflé pans with a little spray oil.
  2. Mix the broccoli, egg, low-fat sour cream, kefir, and toasted bread cubes in a bowl. Season to taste with salt and pepper. Pour the mixture into the pre-greased molds and top with sliced parsley and Serrano pepper.
  3. Bake at 180°C for 12 minutes or until golden.
  4. NOTE: Avoid overcooking the mixture, as it may become hard or dry out.
