Open Pear and Cottage Cheese Sandwich

Ingredients

 
  • 2 cups water
  • 1 tablespoon brown sugar
  • 1 piece star anise
  • 1/4 piece cinnamon stick
  • 1 tablespoon sliced fresh ginger
  • 1 teaspoon lemon zest 
  • 1 sliced pear
  • 2 slices Cero Cero Bimbo bread (lightly toasted, fat-free)
  • 4 tablespoons cottage cheese
  • 2 tablespoons honey
  • 2 teaspoons dried cranberries
  • 2 teaspoons sliced almonds

For the pears:

To make the sandwich:

  1. In a saucepan, heat the water and add brown sugar, star anise, a cinnamon stick, lemon zest, and fresh ginger.
  2. Boil over medium heat until light syrup.
  3. Add the pear slices and cook for 6 minutes or until the pears are soft. Remove the slices from the syrup and set aside. 
  1. Spread a spoonful of cottage cheese on a slice of Cero Cero Bimbo Bread and place the pear slices (equivalent to half a piece).
  2. Drizzle with a tablespoon of honey and decorate with blueberries and almonds.
  3. Repeat for another toast.
